5 Fruity, Gluten-Free Desserts from Snixy Kitchen

One of the hardest parts of going gluten-free is passing up on dessert... especially if you’re a kid with a sweet tooth. The good news is there are wonderfully talented people out there like Sarah (aka Snix) from Snixy Kitchen, experimenting with seasonal ingredients and gluten-free flours and we get to reap their rewards.

Sarah cut out gluten from her own diet as a last-ditch effort to combat chronic migraines. She’s always loved playing around with ingredients, making up the rules as she goes along, and concocting new and inventive dishes.

Gluten-Free Strawberry Balsamic Thyme Galettes

Spring’s little heart-shaped berries are hard not to love. They’re perfect just about any time of day on their own, mixed with yogurt, thrown in smoothies and the list goes on. Paired with the sweet tang of balsamic vinegar and a hint of herbal notes, Snixy Kitchen takes the strawberry to a whole new level in this gluten-free galette, where a flakey and flavorful crust holds in all the warm, jammy goodness. The mini hand-held, open-faced tarts make for a light, bright afterschool snack that’s packed with vitamin C and antioxidants or a delicious dessert topped with vanilla ice cream.

Vegan Lavender Early Grey Blackberry Ice Cream Floats

If you’re looking for an afternoon pick-me-up for warmer days, this will be your new favorite. Skip the soda and/or the coffee. The sugar-caffeine fix will have you crashing by dinnertime. I love anything grab-and-go. It makes mornings and snack times just way easier because we’re always running late. While I’m not big into to chocolate for breakfast, I do allow it once in a while in the afternoons. Plus, these crumble bars really aren’t super sugary so they get a pass.

Snixy Kitchen pairs gooey vanilla cranberry jam between a crunchy, nutty cookie crust. The good news is the chocolate is extra deep dark (always looking out for health benefits) and it balances so nicely with the tangy cranberries. 

Hibiscus Strawberry Curd Tarts with Toasted Meringue

If you have a special occasion coming up or you’re just a baking goddess, you need these tarts! Not only are they beautiful, they are beyond delicious. Hibiscus brings flower power and a pretty pink to the pastry and you can never go wrong with the sweet-tart strawberry citrus combo.

The toasted lemon meringue on top is a wonderful addition for the eyes and the taste buds. The textures all work beautifully together as well from the crumbly gluten-free almond crust to the velvety strawberry curd and airy meringue. It’s just all around to die for!
